Fabien and Cyril Boisard have been at the helm of this domaine since 1996. The domaine now works entirely by hand using natural yeasts and minimal sulphur. In recent years they have started work on small plots of vines in Brain, the village to the west of Saint Nicolas. The vines for Sables are 20-30 years old and the fruit has evolved complexity alongside the wild strawberry and tart cherry flavours. The taut acidity makes this a great wine to go with rich meats like duck or salami. 12.27% (yes, really.)
