Red cherries, strawberries, raspberries and cream on the nose, follow through onto the palate. Long, intense red fruit finish with a very subtle fine mousse. Pinot Noir and Pinot Noir Precoce grapes were hand-harvested, destemmed and cold-soaked for four days to extract colour, body and flavour. 80% of the total blend was fermented in 4-5 year old Burgundy barrels and left to age for six months to add depth and structure.
