Approximately 10% of the blend was fermented in old Burgundy barrels. The wine aged on lees for five months in barrel and a further three years in bottle before disgorging with 38g\/L dosage. Notes of brown sugar, ripe red fruit and pastry on the palate; it has a sweetness that compliments the classic English acidity to create a perfectly balanced wine.
