Paul's Pinot Noir is fermented in mainly old oak barrels then left to mature for 11 months allowing the fruit and wood characters to harmonise. The end result shows cherry and raspberry fruit with savoury, earthy elements. The grape’s natural acidity makes it ideal for pairing with both furred and feathered game.
