The grapes were hand harvested, chilled and 30% was gently whole bunched pressed. They underwent a 3 day maceration before spontaneous fermentation began. Malolactic proceeded in barrels and the wine was left to mature using 30% New French oak barrels for a period of 11 months.
Tasting Note: Cola tonic and a floral raspberry nose. Red fruits on a very light palate. Delicate and integrated. Drinks beautifully now and will further improve with cellaring.
