These parcels are situated 200 m above sea level caressed by the cooling sea breezes from the Atlantic a few kilometres away. Rainwater is retained in the iron-rich clay and cobble soils which results in low yield and flavour concentration.
No enzymes or yeasts were added to allow spontaneous fermentation to happen. Only 30% was allowed to go through malolactic fermentation and the wine was matured for 8 months in French oak barrels and perfect in colour.
Tasting Note: Notes of vanilla, cinnamon and clove. Also Fynbos, stone fruit, pineapple. Balanced palate for such a young wine, textured, complex, layered, elegant, creamy yet delicate. Stone fruit, melon, citrus finish.
