Based in Chablis Didier and Hélène Defaix make all their wines here including the Rully,150 km to the southeast.  The Rully Blanc Les Cloux is an absolute joy - great concentration of ripe almost tropical edges with a sharp tingle of lime.  The Chablis Côte de Lechet, where they own 8 hectares, combines backbone acidity, flint concentration the natural ripeness of the vintage.
